Wedding Celebration Tasks: a) Name the type of menu outlined. The menu outlined is a function menu. This menu is used for special occasions such as weddings, formals, pastries and business conventions. It is prepared as a four course dinner starting with entrée, main and ending with dessert. b) Describe how the food service staffs are likely to organise the serving of meals, with each course having two choices. The food service staffs are likely to organise the serving of meals by asking the person what two choices they would like from the menu, or one person sitting at that table is served the first course on the menu whereas the other person is served the second course on the menu. It’s basically served in a pattern. c) Design a set of SIX different appetizers that may be served to precede this meal. Entrée Creamy garlic prawns Salt and pepper chicken Main course Angel hair pasta with crab, chilli and tomato Served with side dish of your choice from rocket and parmesan salad with balsamic vinegar or vegetables Balsamic roast chicken Served with side dish of your choice from baked potatoes with chives and sour cream or roasted vegetables Dessert Sticky date and pecan pudding with ice-cream Baked coffee cheesecake with coffee cream d) Suggest TWO possible soups which could be included as a soup course. 1. Pumpkin and chickpea soup 2. Sweet corn and chicken soup e) Ten guests are vegetarian. Three of these are strict vegans; the other seven will eat eggs and dairy products.
