Chapter 7 1. Discuss the six characteristics of the hotel food and beverage working environment. There are six characteristics within the food and beverage department which consist of fun and excitement, opportunity for growth, challenge, dynamic, creative and team work. The first characteristic is fun and excitement. When working in the food and beverage department each day varies. Most employees can be doing a variation of things and being able showcase their talents for the guests. The food and beverage department also has great opportunities for growth whether it is food and beverage manager, general manager of the hotel, or even operations director the possibilities are endless and are only limited by the employee’s imagination. The third characteristic is challenge; working in the food and beverage department every day can present certain challenges. This position gives the employees to recognize these challenges and find ways to overcome them in order to provide the guests with the best service possible. For the most part the overall dynamic within the food and beverage department is similar on a day to day basis fast paced and busy; however, there are days where the overall dynamic may change based on a special event such as a wedding or birthday where the intensity level can go up ten notches. The food and beverage department has to be ready for anything that may come their way. Working in the food and beverage department requires creativity as well. There will be days where guests will require that the food and beverage department resolve a variation of problems. The employees must be outside of the box thinkers and be prepared to find ways to make the guests happy.
