Case Study – Chapter 19 1. After reading this case, should “pink slime” be banned as hazardous food product or are the claims unfounded? Answer: Pink slime refers to lean finely textured beef (LFTB), a food product created by a process that recovers useful bits of meat from carcass trimmings. These bits are warmed centrifuged to remove the fat, treaded with ammonium hydroxide gas to kill germs, and then compressed into blocks that are frozen for later use. I think that pink slime should not be banned. Banning of LFTB is wasting of 10 to 12 pounds of edible lean beef from every animal and slaughtering another 1.5 million animals. Producing quality lean beef without any substance can be edible. However, manufacturers should bring public to notice and mention the additive in the label so people can choose if they want to consume it or not. 2. Develop a public relations strategy that BPI and other firms that manufacture LFTB could use to combat the bad publicity and efforts to ban the use of the products. Answer: BPI and other firms that manufacture LFTB could conduct a press conference. Media plays a huge role in influencing public’s behavior and attitude towards any product. They should communicate with various media channels and let them know that what they are doing is not wrong. They should place ads in the newspaper about how they produce safe, consumable lean beef. They could involve the government, U.S. Department of Agriculture and Food Safety and Inspection Service to assess the process and the final produce of lean beef and this would help communicate to the media and thereby to the general public that lean beef is consumable. 3.
