Just Falafel Interview A lady from the Emirates has given the customary Middle Eastern food a delicious twist. Inundated by the positive feed back to her Abu Dhabi stores, she's has decided to take her culinary experience all over the globe. Not only has she made inroads in the male dominated business environment in Abu Dhabi but she is also one of the first and few women from the region to get a Masters in Business Administration. Her name is Alia Al Mazroui, she is 30 years of age and has not just set the trend for women in a mainly male field of the restaurant industry, and she has also recreated one of the most popular dishes in the region known as falafel. Her retail store known as Just Falafel which was co-founded with the assistance of Mohammad Bitar her business associate, has given a fresh delicious twist to the customary fried patty that is made of spiced chickpea. She has found a way of reinventing traditional foods and making them appear trendy. If anyone walks into the café’s outlets on Khalidiya or Hamdan streets in Abu Dhabi, they will definitely be left scratching their head, musing over which falafel they should order; curry-smothered Indian, yoghurt-drizzled Greek, sauce-soaked Mexican or humous-smeared Lebanese.
