Vegetable Rolls Last month, I visited my friend Amy’s home. She served me dumplings, egg rolls, hot tea and vegetable rolls. My eyes could not move from vegetable rolls because they were colorful and looked delicious. The outer layer was made with rice paper and inside had chili mayonnaise, tomato, carrot, lettuce, red and yellow bell pepper and cellophane noodle. I could not wait to try the vegetable rolls so I had one bite. I said “Wow!” and I had another bite and another. It tasted juicy, soft, crunchy, salty, creamy and sweet. The smell was mixed with chili, fishy, lemon, fresh mint and basil. I tried not to gobble down my food too quickly. I did not want my friend to think I was a pig. But even though I tried not to, I still overate. After I ate seven vegetable rolls, my stomach had no space. I stopped eating and asked Amy for the recipe of vegetable rolls. She had remaining ingredients to make vegetable rolls so she showed me how to make them. After one week, I made it myself. First, I made chili mayonnaise. In a small bowl we put one half cup of mayonnaise and Asian chili sauce, one tablespoon of brown sugar, one teaspoon of fresh lemon juice and one teaspoon of fish sauce and crushed two cloves of garlic and then stir them. I created a beautiful red chili sauce. I had one red and one yellow bell peppers and cut them into thin slices. Then I shredded a big carrot, Put them in a big bowl and added a quarter cup of chopped fresh mint and basil chili sauce. After that I boil the cellophane noodle and waited for to cool it. Soak a rice paper in the hot water for twenty or thirty seconds until it softened. I laid paper tower on a cutting board. I placed the rice paper on the paper towel and I laid lettuce leaf in the middle of the rice paper and put one spoon some of the vegetable mix on top.
