Wray For Dr. Edwin Holt SOC100 Date: 3 February, 2013 From Spaghetti and Meatballs through Hawaiian Pizza to Sushi: The Changing Nature of Ethnicity in American Restaurants Even though some people think that eating out is a great experience; so many people have no sense of excitement or daring when it comes to choosing a venue for dining out. As a cooking enthusiast, I always want to eat something different when I dine out. Unlike my husband, who has a tough time enjoying a meal at an unfamiliar ethnic restaurant. However, menus change due to the ethnic diversity of a community and the changes are epic. This paper will discuss the titled journal article concerning its relevance to the field of sociology, the chapter in which it most relates to, the type of article referenced, and how this article is different from articles in non-scholarly periodicals. The journal article is an informative research piece that speaks of the changes in menus over an era. I know this because this article enlightened me by giving me information that I did not previously have. This process of the research was studied through three different approaches: the melting pot, symbolic ethnicity, and multiculturalism (Gvion & Trostler, 2008, p2). Gvion and Trostler used information from previous studies to conclude their own research. The research for this particular article covered four distinct periods: the 60’s, 70’s, 80’s, and 90’s. This article pertains to Restaurant Menus in this span from the reference of diverse ethnicities.
