Name: Fiachra Hughes Student Number: C13313916 Course code: DT421/2 Name: The properties of carbohydrates Day 1 Date: October first 2014 Introduction: The body gets energy from consuming food one of these food sources is Carbohydrates, when the digestion process begins Carbs are the first to be digested as they are the most important source of energy for our body’s, Carbohydrates are most commonly found in plants cellulose probably being the most common carbohydrate in the world given the sheer number of plants! Water soluble carbohydrates are sugars they’re sweet in taste. Another name for a carbohydrate is “Saccharide” Carbohydrates can be placed into three classes Monosaccharides, Disaccharides and Polysaccharides. 1. Monosaccharides are simples singular sugar units the most common monosaccharide is made up of six carbon atoms. Glucose and Fructose are common monosaccharides found in fruit juices, honey etcetera. 2. Disaccharides contain two monosaccharides joined together by a glycoside bond. Disaccharides are white water soluble solids, maltose found in germinating grains and contains glucose units linked together. 3. Polysaccharides contain many units of monosacchraides linked together, starch is found in grains glycogen is found in muscles and cellulose found in plants cotton and paper. Aims: 1. Distinguish the different properties of Starch and Sucrose 2. To break down both solutions in order to analyse their components and respective properties. Safety Audit: 1. Caution should be taken when handling the concentrated Hydrochloric Acid as it is a corrosive and an irritant. Protection to be used includes safety goggles and rubber gloves. 2.
