Cows are naturally herbivores and live on wild grass and other plants that grow in the areas they live. In fact most cattle are fed grass in “cow-calf” operations prior to being sent to feed lots. These natural grasses grow without any assistance from humans; so no added costs for seed, fertilizer, or processing. Grass fed beef is a higher quality product that takes only six more months to mature than corn fed beef. Our nation moves toward a demand for quality, healthy beef shown by an increase in sales for grass fed beef from local farmers and organic grocery stores.

There are two main brands of beta-agonists; OptaflexxTM, with the active ingredient ractopamine hydrochloride, and ZilmaxTM with the active ingredient zilpaterol hydrochloride.

In a compelling thread about the cattle industry that runs through the entire book, Pollan begins by describing how he decided to view the life-cycle of a cow by buying a steer. Pollan describes his interest in buying the steer as not “financial, or even gustatory. No, (his) primary interest in this animal was educational” (66). Although this has a nearly clinical tone, Pollan nearly immediately begins using pathos to evoke an emotional response for the steer. First, and very importantly, Pollan refers to steer 534 as ‘he’, not ‘it’.
