Chapter 1- An Overview of Nutrition 1. What is a nutrient? Briefly describe the six classes of nutrients found in foods. ANS: Nutrients are “chemical substances obtained from food and used in the body to provide energy, structural material and regulating agents to support growth, maintenance, and repair of the body’s tissues.” The six classes of nutrients found in food are composed of” two inorganic nutrients, meaning that they do not contain carbon and four organic nutrients, which contain carbon an element found in all living things. The two inorganic nutrients are minerals and water. Minerals are the simplest chemical elements whose atoms are alike, meaning its identity never changes. Water is a compound made up of two elements hydrogen and oxygen. The four organic nutrients are carbohydrates, lipids, proteins, and vitamins, which contain hydrogen, oxygen and carbon, with the exception of proteins and vitamins, which may contain nitrogen and other elements.” Whitney, Ellie. ANS: The science of nutrition is “ the study of the nutrients and other substance in foods and the body’s handling of them, in which whose foundation depends on the other sciences of biology, biochemistry, and physiology." The types of research studies and the methods used in acquiring nutrition information are: 1. Scientific Method: The scientists identify the question or problem to be solved, then formulate a hypothesis, design a study and conduct the research, summarize, analyze and interpret data, finally develop a theory and then conduct new research; and the process starts again. 2.
