Mexican Rice Are you craving that great Mexican rice from your favorite taco stand? Here it is. This is just like good Mexican restaurant rice. It’s easy to make and delicious to eat. What you will need is: a cooking stove, a pot, a blender, 2 spoons, 1 can of whole tomatoes, ¼ of an onion, 1 cup of rice, 3 cups of water, 1 tbs of canola or vegetable oil, salt, and a plate . All the ingredients can be purchased at a grocery store or you may already have these items. Just remember the ingredients, the steps, and pass down the recipe to your loved ones. First you want to turn on your stove on low. Place your pot on the stove. Add 1 TBS of oil. Let stand for 2 minutes. Next you want to pour in a cup of rice. With your spoon move the rice in a circular motion. Keep stirring until rice is a golden color. When the rice is golden, carefully remove the pot from the stove and set aside. Get your blender; add about four whole tomatoes from the can, ¼ of an onion, and 1 cup of water. Cover the blender with a lid and blend for 1 minute. Carefully without burning yourself, put the pot of rice back onto the stove. Add in the blend tomatoes and onion. Stir in and add 2 cups of water. Let the rice cook uncovered. Once the rice starts to bubble you want to add salt. There is no precise amount of salt you can add as much as you want depending on how you salted you like your food. If you are not sure its recommendable to put 2 teaspoons, just to be safe. Cover your rice and let it cook for 15 minutes on low. Before the timer hits 15 minutes, you may want to check if your rice needs water. If it does add about ¼ cup so your rice won’t stick to the bottom. When 15 minutes past, remove your rice carefully from the stove. Let it sit for 10 minutes. After those 10 minutes your rice is ready! Eat carefully, it may be hot.
