Lemon: a yellow oval fruit with juicy acidic flesh. The lemon is the leading acidic citrus fruit because of its odor, flavor and color. Why is the lemon yellow? The yellow color depends on bioflavonoids, which belong to the group of flavonoids. Flavonoids contain the natural organic pigment, flavone, which gives color to plants, flowers and fruits. The lemon is the symbol of the Mediterranean warmth and sun, but accurately comes from the Far East (India and China) where it was found growing wild. Lemons were used as astringents and antidotes in China, India and in Mesopotamian civilizations. Emperor Nero of Rome regularly consumed lemons in protection of a possible poisoning. Lemons were planted in Genoa as the first real cultivation of lemons in Europe. In the fifteenth century it was discovered that lemon juice kept away scurvy. There are special considerations when cultivation lemons. First, the Lemon is more sensitive to cold than the orange and less able to recover from injury. Therefore, the tree is defoliated at 22˚ to 24˚. Second, lemon Trees should be spaced 25 ft apart in each direction, if crowded, production declines. The trees must be pruned when young and kept below 10 or 12 ft. Next, lemons under 2 1/8 inches are too immature to attain proper quality for marketing and fruits over 2 1/2 inches are too large.
