The Journey Of A Cheese Sandwich To begin with a cheese sandwich contains; Carbohydrate is in the bread (starch is the carbohydrate in the bread.), Starch – glucose, Protein in the cheese, Protein - amino acids, Lipids in the cheese, Vitamin B1 and Calcium. So through all of digestion most of these have to broken down and digested. The journey of the cheese sandwich starts in the mouth (the first part of the digestive system) located in the area above your chin, located on your face. This is where your teeth and incisors break down your food into smaller chunks so it makes it easier for the dampness of your saliva (produced by your 3 salivary glands) to make the entire piece soggy so it makes it easier to swallow. Now the large insoluble molecules have been broken down into small soluble ones. (These are the 3 locations of your salivary glands surrounding your mouth). It also breaks down some of the carbohydrates as saliva contains carbohydrase which as in the name breaks down carbohydrates. The Amylase digest the starch to glucose. (Located from: your mouth downwards into your neck and ends just under you rib cage and connects to your stomach). The reason it goes down here and not down your windpipe is because a flap called the epiglottis drops over the windpipe stopping the sandwich When the sandwich is broken down as much as it can be and damp enough to not hurt it is swallowed and the sandwich goes down into the oesophagus particles from getting into the lungs. If it did this could cause serious damage and would most likely result in death. Whilst the food is travelling down the oesophagus and throughout the small intestine
