Jack Daniels Achiote Flank Steak
* 3 lbs. Flank Steak * 3 tablespoons Paprika * 1 tablespoon Garlic Powder * 1 tablespoon black Pepper * ½ teaspoon Chili Powder * 2 tablespoons Granulated Onion * 1 tablespoon Lemon Pepper * 2 tablespoon Brown Sugar * 2 tablespoons Dry Thyme * 4 tablespoons Achiote (you can find this in the international section of the market) * ½ cup Jack Daniel's Whiskey * Kosher salt to taste
3 tablespoons salad oil
To make the marinade: Mix together all the ingredients except the salt and salad oil (we recommend wearing gloves to prevent your hands from turning red). Rub the meat generously with the marinade. Seal in an airtight container and let sit in the refrigerator at least two hours (best if overnight).
Rub the meat with vegetable oil and season with salt. Grill over medium-high to high heat. About six minutes per side will produce a medium-rare steak (make sure the internal temperature reaches 125º F). The outside of the steak will get dark because of the rub. Slice meat across the grain and serve.
