Second, place beans in a medium pot, and cook the beans in a four cups of water for about two hours or until tender. Bring to a boil, reduce heat, and simmer one and half hours, or until tender. Drain the beans and reserve the liquid. Heat the oil in a separate pot, (skillet) a little over medium. Then, sauté shallot and garlic until odorous. Then, fry beans with shallot and garlic for about two minutes. Next, measure four cups of the bean’s liquid and pour it in the pot with the frying beans. Add one more cup of water if necessary. Stir and let the beans stand for about five minutes. Then, stir the two cups of long grain rice into the beans. Next, season with bay leaves, adobo seasoning, salt, pepper, and cloves. Then, add sprigs of parsley and thyme, and scotch bonnet pepper on the top of the rice, and bring to a boil.
