HOT SAUCE: DO WE REALLY PUT IT ON EVERYTHING? Aris Myers September 25, 2012 Chef Training II: Garde Manger Chef Douglas There are so many condiments in the world that people use on food. You have ketchup and mustard, the classic husband and wife for burgers and hot dogs. You have mayonnaise, which is the masculine spread for sandwiches and the base for most dressings and salads. Yes, the list goes on and on but there is only one condiment that is hot and sexy. Hot sauce is a vibrant burst of chili pepper flavor. It brings a spicy taste to various foods, sauces and snacks. This essay will discuss the history and where chili peppers come from. It will discuss what hot sauce can be used for and what this sexy condiment is made of. This essay will also answer the lingering question; do we really put it on everything? It is said that no one person created hot sauce. Hot sauce has been around since early civilization. Back in 3500 B.C., the Aztecs began to plant and prepare chili peppers. They would use them for flavor and medicinal purposes. Chili peppers originate from tropical South America. Chilies were also used as a form of punishment for Aztec children. When a child was punished, they were place in front of a fire of burning chili peppers, which would cause irritation to the child’s eyes. Christopher Columbus was responsible for bringing chili pepper to Europe and India. Shortly after that, chili peppers became popular in the cultures that enjoy spicy foods. Now chili peppers create the spicy goodness inside various bottles of hot sauce. Hot sauce is made by harvesting peppers and picking the ripest peppers. Then the peppers are grinded up and are mixed with salt, which creates a mash. The mash is then put into barrels to age and the barrels will allow air for yeast growth. But the barrels cannot have too much air or it will change the flavor of the
