Section 4: Planning and evaluating a Gastronomic Experience & Assessment Unit No: DL3M 35 By Carrie-Anne Hume Submitted on the 12th of May 2011-05-04 Introduction As part of my HND course in Professional Cookery, I have to write an evaluation on a gastronomic experience. This is my last assessment to be completed for my Gastronomy Unit. It should take me approximately 25 hours to complete my research, planning, visiting the establishment and reporting my conclusion of the whole experience. I have to take into account the outside of the restaurant, the greeting we receive when entering the building from the front of house staff and the overall dining experience. Some of the class choose to go to Gleneagles for their fine dining experience, but a few of my class mates and I decided it was too expensive and out of our price range. We decided we would conduct our gastronomic experience at a restaurant called Citation, which is situated on Wilson Street in Glasgow city centre. First point of contact When we decided on the restaurant to book, we informed them that we were students at the City of Glasgow College and were going to compile a report on a fine dining experience as this is part of our HND Hospitality course. One of our group went in to Citation and explained that we had a booking coming up and would it be possible to have a menu to look over beforehand. They couldn’t have been more helpful or obliging and told us to phone them up if we needed any more information. Appearance of the building On arriving at the outside of the establishment, I must say, it was rather stunning and I was very excited about going in as I had walked past it several times before. I had to marvel at its grandiose façade of Corinthian style pillars and the alabaster coloured brickwork just blew me away to another era. Citation is situated in the
