ABSTRACT Most of us had heard the term of “exotic food” but not really know how to define it. Most of us also can name several countries that very well-known with some of their bizarre food but cannot say the implications of these foods. In this review paper, we would like to highlight the relationship between the exotic foods in food service aspects such as food safety as well as tourism which also known as food tourism, which make people travel around the world to try all these foods that different from their national food consumption habits. In this paper, we also included several recommendations in food service regarding food tourism associated with exotic food. ------------------------------------------------- INTRODUCTION Gastronomic tourism refers to trip made to destinations where the local food and beverages are the main motivating factors for travel. It is also known as “food tourism”, “tasting tourism” or “culinary tourism”. According to the International Culinary Tourism Association, culinary tourism is defined as “the pursuit of unique and memorable eating and drinking experiences”. What this means is there is a particular audience of people who are willing to travel the world in order to sample and experience authentic international cuisine (Wordpress, 2012). In addition, a culinary tourist can be a visitor who has travelled to town specifically to dine at your establishment. A culinary tourist can also be a business traveller who decides to dine at your restaurant. Nearly 100 per cent of tourists dine out when traveling, and dining is consistently one of the top three favourite tourist activities. There is a high correlation between tourists who are interested in wine/cuisine and those interested in museums, shows, shopping, music and film festivals and outdoor recreation.
