Investigation and comparisons of vitamin C (ascorbic acid) within a variety supermarket fruit juices Abstract The aim of this research is to find out the amount of vitamin C there is in various supermarket fruit juice and how it may contribute to our health. To achieve this, a titration is carried out using known amount of a standard solution against a dye provided, further titrations are carried out using glacial acetic acid then finally the solution gained is titrated using the fruit juices provided. Following the method and accurate recordings should provide the correct concentration levels of ascorbic acid within each fruit juice. INTRODUCTION It is important to know the resources needed for the body to function to its fullest ability. Vitamin C (ascorbic acid) is a relevant source to our body’s system. It acts as an antioxidant (these are nutrients present in our food which prevent and repair damages caused by free radicals). It acts as a coenzyme in the hydroxylation of amino acids such as lysine, required for growth and proline known to be the major constituent of collagen, it also acts as a coenzyme in the development of noradrenalin ; the neurotransmitter of peripheral sympathetic system. Vitamin C can be found in green peppers, broccoli, tomatoes, strawberries and in many citrus fruits e.g. lemon and oranges. Lack of vitamin C contributes to heart disease, scurvy, diabetes and cancer.
