Abstract Betacyanin is the reddish violet pigment that gives the beet its particular color and it is located in the vacuole of a cell. When the cell membrane is damaged, the cell releases the Betacyanin pigment. In order to understand the condition beet cells get damaged, an experiment was performed; 2 cm of beet were placed in seven different scenarios along different solutions. During the process, if a beet cell was damaged, it would produce a reddish violet pigment throughout the solution. In order to measure the exact amount of damage done to the cell, the spectrophotometer was used to measure the absorbance of light at 550 nm of wavelength. The results indicated that when beet was placed in a high pH solution, the absorbance was 0.161, which was only 0.043 way from the control which was 0.118. However, all the other conditions exceeded the absorbance compared to the control. The extreme low temperature had the highest absorbance with 1.785, with a difference of 1.667higher than the control. The results indicated that in an extreme low temperature condition, most damage of the cell membrane occurred, resulting in the beet pigment release. All the conditions except the control disrupted the beet cell plasma membrane: detergent, extreme high temperature, extreme low temperature, organic solvent, low and high pH.
