Michelle Wilkinson Unit 11: The Impact of Diet on Health Assignment 3: Principles of Food Safety and Hygiene Andrea Southwell Principles of Food Safety and Hygiene When preparing a meal it is important to follow safe practices to ensure that food is handled correctly to ensure that diseases and harmful bacteria is not passed on to make sure that people do not become ill through food poisoning. I have chosen to explain how to cook a roast chicken dinner following the safe practices to ensure that the meal is cooked correctly. Raw chicken can carry salmonella bacteria, which is responsible for more cases of food poisoning than any other pathogen. It is easy to avoid getting sick from chicken as long as you follow safe food handling practices. When buying your chicken from shops or supermarkets you should make sure that the chicken is fresh, you can do this by checking the best before date that should be on the packaging. The chicken should also be kept in a chiller and feel cold to touch, this will prevent any bacteria from growing on the chicken. The chicken should also be wrapped in plastic bags to prevent it from leaking on to other food products. If you are buying a frozen chicken you should make sure also that it is before the best before date and all packaging is intact. If you are using a frozen chicken you must make sure that you plan ahead and defrost the chicken in a refrigerator, it is not safe practice to defrost the chicken on the kitchen side as these conditions make it possible for bacteria to grow. Once the chicken has defrosted I should be kept in the refrigerator until you are going to cook it. A defrosted chicken should only be kept in the fridge for up to one day before cooking, this will reduce the chances of bacteria from growing.
