How to make a Pumpkin Roll Introduction This is a wonderfully delicious recipe, which can be prepared in advance for any occasion and frozen. To thaw the roll, place on a plate cover with powdered sugar and plastic wrap and leave out or refrigerator thaw. Follow these instructions and anyone could bake with ease in no time at all. After trying many I found this one to be the best. I To begin with a few ingredients that is needed. This cake makes two rolls, six large eggs (at room temperature), and two cups granulated sugar, one fifteen ounce can of pumpkin, one and three fourths cup self rising flour, one teaspoon nutmeg, two and a half teaspoons of cinnamon, two teaspoons of ginger, two teaspoons of lemon juice. There are also a few ingredients that are needed for the filling, two cups powdered sugar, two eight ounce packages cream cheese, half cup margarine softened and one teaspoon vanilla. Also needed are one and half by fifteen inch cookie sheet parchment, or wax paper and a cotton towel or cheese cloth large enough to fit over the entire cake. There is no reason to be concerned with making sure the ingredients are those expensive name brands, generic does just as well. II Preheat oven to 350 degrees. Needed are two separate bowls. In the first bowl mix flour and spices together and set aside. Next in the second bowl mix the first three ingredients together beginning with the eggs. Break them into your bowl and then beating, two to three minutes until light and fluffy. Next slowly add your sugar and then pumpkin. Mix those ingredients well. Now add the first bowl containing your flour mixture with the pumpkin mix. Once those ingredients are stirred together the final ingredient lemon- juice is to be added now.
