Food preservation this day in age is thought to be considered expensive meats, cheeses, and vegetables. But what are expensive cured meats and aged cheeses where once necessary for survival. In the past there was no such thing as refrigerator or chill boxes. Transportation would take days now only takes a few hours. So people long ago without the availability of chilling had to find other ways of bring food on trips or surviving long winter where food was not available. A few ways that people persevered food back then that we enjoy as great tasting food now is Jerky, Salumi, or Pickling. Jerky or Jerk meat is made all over the world. In Asia they make Jerky out of cows and pigs. In America they make Jerky out of deer and turkey. In Australia they make Jerky out of kangaroo. Thus almost every culture in the world has some type of Jerky. Jerky can be made from almost any type of animal protein. You can make Jerky out of snake if you chose to and the necessity was there. Pickling consist of creating a high ph usually vinegar and water, this results in fermentation and the preservation of food. Picking can keep something edible for up to ten months. In Germany pickled cabbage is called Sauerkraut while in Korea pickled cabbage is called kimchee. Sauerkraut uses its salt and its natural water while Kimchee uses rice wine vinegar and hot peppers to ferment. Fermenting causes the cabbage to change flavors which is very appealing. The most popular type of picking that everybody knows is pickled cucumbers. There are many types of cucumbers from salty to sweet.
