In the words of Ancient Chinese Proverb, “if you are planning for a year, sow rice; if you are planning for a decade, plant trees; if you are planning for a lifetime, educate people.” Forks over Knives, directed by Lee Fulkerson, follows suit of the ancient proverbs by educating people about the rapidly growing public health issues associated with the Western diet our country has been so easily fooled into eating. With diabetes, hypertension, cancer, and autoimmune diseases on the rise and more than two trillion dollars being spent on healthcare a year, how can we not see something drastic must be done to stop this downward health spiral that already over 40% of Americans have fallen into?
The solution is simple according to Dr. Colin Campbell, Ph.D., leader of nutritional research at Cornell University for more than 40 years. A whole foods, plant based diet had shown Dr. Campbell throughout his research that it would not only greatly reduce, but a holistic approach such as this would actually reverse these life threatening diseases. In a culture where food is the center of our lives and every function has food and is a time to feast and indulge it is no surprise that the average American is tugging around an excess of twenty three pounds. To combat this, primary care physicians have decided that another pill is not the answer, but instead to greatly reduce or eliminate refined, processed, and animal based foods from the diet will be the ticket to health and longevity. Despite these findings, as fast food franchises have become a large answer to our busy lives and small wallets, so has the prevalence of diabetes and cancer in unhealthy, overweight Americans. As a society we must take charge in this fight for our health by asking questions, being proactive and finding alternatives that negatively impact our health.
