Chemistry Extended Essay What is the difference in the citric acid content in different brands of orange juice? Candidate name: Nguyen Xuan Huy Candidate number: 000538-0056 Word Count: 3583 1. Abstract Orange juice is one of the most popular and consumed beverage in the world. I’ve decided to investigate the difference between some different brands of orange juice. I’ve found that citric acid makes up the majority of acid in orange juice. It contributes to the sour taste of the juice, as well as provides health benefits. Therefore, I designed a titration experiment between the citric acid in a sample of orange juice and sodium hydroxide. Even though there are several acids in orange juice, the scope of the investigation is only in orange juice, as it accounts for more than 90% of acid in orange juice. I used four different brands of orange juice that come from different parts of the world: one from South East Asia, one from Australia and two from North America. I also used freshly squeezed orange juice to compare with bottled juice. In the experiment I created my own sodium hydroxide using pellets and standardized it with hydrochloric acid. Then I measured the amount of sodium hydroxide required to neutralize a sample of acid, hence calculating the mass of citric acid in the sample. The results suggested that tropical regions produced orange with less citric acid, as opposed to temperate region, whose oranges contain more. Additionally, freshly squeezed orange juice contains more citric acid than bottle juice. Word Count: 222 Table of Contents 1.
