Benefits of a Whole Foods and Plant Based Diet Throughout history, food has always been a necessity to living beings. It is something we cherish, depend on and even fight for. Food has become a part of every culture and tradition. America is well known for her western diet, which consists of large amounts of animal based foods such as meats and dairy products. Overtime, countries around the world have increasingly adopted this diet to their lifestyle. Because of the way we eat, the nation is experiencing a health crisis. There is an increase in obesity among the population and more people are affected by food related diseases such as heart disease, stroke and diabetes. One might wonder if there is a simple solution to many of our health problems. Studies prove that adapting a whole foods and plant based diet will prevent or in current cases reverse some of the worst diet related diseases. In the documentary Forks over Knives directed by Lee Fulkerson, Caldwell Esselstyn Jr. MD, T and Colin Campbell PhD completed studies that demonstrate the benefits of this lifestyle. One of Dr. Campbell experiments was a 5-year study in China observing and researching the Chinese diet. The evidence he found was no surprise. The first generation of the families ate foods from their native land, which consist mainly of rice and vegetables. Many of children in the families eventually replaced their native foods with animals based foods such as red meats and dairy products. As a result, the children became overweigh and sick. In addition to Dr. Campbell’s experiment, Dr. Esselstyn put a group of his sick elderly patients on a strict eating plan for several years. The diet make up of natural foods from whole minimally refined plants such as fruits, vegetables, grains and lagoons.
