Fiber 1
The function of fiber in the body is to help digest the plants from several
materials that your body may not be able to digest (2008). Soluble is fiber that
may be associated with increased diet quality and decreased risk of
cardiovascular disease (2008). Diets low in saturated and trans fatty acids and
cholesterol alone will modestly reduce LDL cholesterol beyond levels achieved.
The highest proportion of soluble fiber of any grain is oats. Oat bran, oatmeal,
beans, peas, rice bran, barley, citrus fruits, strawberries, and apple pulp are
foods that are high in soluble fiber (2008). Insoluble fiber has been associated
with decreased cardiovascular risk and slower progression of cardiovascular
disease in high-risk individuals (2008). Whole wheat bread, wheat cereals, wheat
bran, rye, rice, barley, most other grains, cabbage, beets, carrots, brussels
sprouts, turnips, cauliflower, and apply skins are foods that are high in soluble
fiber (2008).
According to the article, it is recommended that children that are over the
age of 2 gradually adopt the step I diet (Van Horn, 1997). After they adopt the
step I diet, they should reduce total and saturated fat intake to 30% and 10% of
total calories intake (Van Horn, 1997). They should also derive the majority of
calories from complex carbohydrates. When determining the appropriate
amounts of dietary fiber for young children, the age 5+ rule must be applied (Van
Horn, 1997). The 5+ rule is that children should consume 5+5=10 grams of fiber
